    Peel and thinly slice potatoes and onions.

    Heat abundant olive oil in a pan.

    Poach potatoes and onions in oil for 15-20 mins until tender.

    Drain oil.

    Beat eggs with salt. Add warm potato mix and let sit 10-15 mins.

    Cook tortilla in a little oil until bottom is set.

    Flip onto a plate and slide back to cook other side.
