Grind soaked red chilies, garlic, ginger, cumin, mustard seeds, and vinegar into a smooth, fiery paste.

Marinate the chicken pieces in this paste for at least 30 minutes, or longer for more flavor.

Heat oil in a pan. Sauté the chopped onions until golden brown.

Add the marinated chicken and fry on high heat for 5 minutes.

Add a splash of water, sugar, and salt. Cover and simmer for 30-40 minutes until chicken is cooked through.
