    Blanch the spinach in boiling water for 2-3 minutes, then immediately transfer to an ice bath to retain color.

    Blend into a smooth puree with green chilies.

    Heat oil/ghee in a pan.

    Add cumin seeds and let them splutter.

    Add chopped onions and sauté until translucent.

    Add ginger, garlic, and tomato.

    Cook until the tomato softens and oil separates.

    Pour in the spinach puree, salt, and garam masala.

    Simmer on low heat for 5-7 minutes.

    Add water if gravy is too thick.

    Add paneer cubes and simmer for another 2-3 minutes.

    Stir in heavy cream and remove from heat.
