    Roast the whole eggplant over an open flame (gas stove or grill) until the skin is charred and completely soft.

    Peel the charred skin off and mash the pulp thoroughly.

    Heat oil in a pan. Add cumin seeds. Add onions, garlic, and green chilies. Sauté until onions are golden.

    Add tomatoes, chili powder, coriander powder, and salt. Cook until tomatoes are soft.

    Stir in the mashed eggplant. Cook on medium heat for 5-7 minutes, mashing and mixing well.

    Garnish with fresh cilantro and serve hot with roti.
