Place lentils in a pot with 3 cups of water and a pinch of salt. Bring to a boil, reduce heat, and simmer for 20-25 minutes until tender but not mushy.

Drain the lentils well and rinse with cold water to stop cooking. Transfer to a large mixing bowl.

Add the diced cucumber, chopped red onion, crumbling feta cheese, and chopped parsley to the lentils.

In a small jar, shake together the olive oil, lemon juice, salt, and pepper.
