Spinach Salad with Wakame and Sesame

    Place dried wakame in a small bowl and cover with cold water. Let soak for 5-10 minutes until rehydrated and expanded.

    Drain the wakame well, squeezing out excess water. If pieces are large, chop them smaller.

    In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and sugar until sugar dissolves.

    Place the baby spinach in a large bowl. Add the rehydrated wakame.

    Pour the dressing over the salad and toss gently.

    Sprinkle with toasted sesame seeds and serve immediately.
